Enjoying Rovigo and Its Cuisine with Maria Cristina Buoso (Part
1)

Dear friends,
In the past I have already published tourist
interviews. From today I officially start with this new column entitled Amazing
Italy. It will see as guests friends and colleagues who will present us
with places and tourist attractions of their city, either hometown or in which
they live or have lived for many years, or places they have visited anyway and
found interesting.
The first guest to participate in this new column is the friend
and colleague Author and Blogger Maria Cristina Buoso, who will describe Rovigo to us. In
every meeting with her, Maria Cristina will also delight our palate by
presenting us a recipe of traditional local cuisine.

MTDD: Hi
Maria Cristina, it's a pleasure to have you as my guest again after the
interview on your book and the subsequent review I wrote.
Would you like to introduce yourself briefly to those who don't
know you yet?
MCB: Certainly.
Thanks for the invite. Let me introduce myself briefly. My name is Maria
Cristina Buoso, and I am an author and blogger.
I have always been an author but a blogger for a few years.
When Maria Teresa asked me if I would like to talk about an Italian
region and/or city, I was pleased to accept her invitation and decided to
introduce Veneto, and Rovigo and its surroundings to you.
Rovigo is a medieval city of Romanesque origin; the first document
on the town dates back to April 24, 838, where Rovigo is defined in Latin -
villa que nuncupatur Rodigo - or "rural village called Rodigo". In
920, the bishop of Adria Paolo Cattaneo had a fortification built on the banks
of the Adigetto, transferring the bishop's seat there. Before the Romans, the
Etruscans also stopped in these marshy lands.
MTDD: Maria
Cristina, Would you remind us what happened in Rovigo after the fall of the
Roman Empire?
MCB:
After the fall of the Roman Empire, Rovigo was saved from the Barbarian
invasions thanks to the swamps surrounding it. It has always been a land
disputed by other peoples. For example, the Este family was already present in
Rovigo in 1117, and, apart from brief parentheses, Rovigo remained Este for almost
three centuries. Then for another three centuries, from 1482, there was the
Republic of Venice and then, at the beginning of the nineteenth century, the
French domination and finally the Austrian domination, until the annexation to
the kingdom of Italy.
MTDD: What
impact did all these different civilizations have on the development and
culture of Rovigo?
MCB:
Each left their mark on the city and contributed to creating a somewhat closed
character in Rovigo, famous "Ruigo no m'intrigo" (in Rovigo I do not
intrigue). It is a proverb that comes spontaneously to the mind of the
Venetians when they speak about Rovigo and has a fund of ancient truth. It
probably originated from the historical factors and events that I mentioned
above. Just think that I was once told even in Switzerland, unbelievable!
MTDD: How
would you describe your city to present it to those who don't know it?
MCB:
Rovigo is a small, pleasant city, full of charm, history, and culture. Lively,
but at the same time quiet, on a human scale, perfect to be known simply by
walking through the town's streets.
MTDD: I am convinced that there is much more to say about Rovigo, am I
wrong?
MCB: No,
you are not wrong at all. I will continue to tell you about this town in the
following articles.
I thought it would be nice to end our interview each time with a
local or Veneto recipe. The problem is that they are many and varied; some
belong to my memories and the land where I was born. However, I leave you with
a recipe that I hope you will appreciate.
I thought about starting with Sugoi (Sugoli), a recipe
linked to my childhood.
Sugoli
It is a
customizable recipe because the cook decides how much flour and/or sugar to use
according to their needs; the exact quantity is not there because each one
adapts it to his own taste, to the type of mash that he has available, etc ...
But I'll try to
give you an idea of how to do it as much as possible.
First, you need to
have the mash available; that's why it is usually done during the harvest.
However, if someone wants to try and make it at a different time of the year,
the procedure will be very different, thus requiring a homemade mash.
In this case, you
will need to have grapes, in my opinion, the black one for sauces is the most
suitable, but you can use whatever you want. You will have to clean it and pass
it either with the vegetable press (in this way, it is closer to the idea of
mash) or, if you prefer, with a fruit juicer.
As for me, I have
always made it by eye because it was taught to me by my grandmother; I would
adjust it according to the amount of mash and depending on how sweet it might
be; hence, I would add a little sugar if necessary.
I'll give you some
hints, but you can adjust to your taste. OK?
Put the juice
obtained in a saucepan and add a spoonful of flour to each ladle and, if you
wish, half a spoon of sugar. Depending on the size of your ladles and the
consistency and the flavor of the mash, taste and adjust it during cooking by
adding more sugar if needed (I rarely use sugar).
As for the jam,
the Sugoi (Sugoli) must not make lumps and must not stick to the bottom of the
pot, which must be with high sides, more or less 20/30 minutes of cooking, but
you will understand when the time comes to remove it by tasting it and ... be
careful for it is hot!
When it is ready,
you can pour it into small or large containers to put in the fridge or a cool
place.
If you want them
thicker, add more flour; if, on the other hand, you want them softer, use less
flour.

passato ho già pubblicato interviste a carattere turistico. Da oggi inizio
ufficialmente con questa nuova Rubrica intitolata Meravigliosa Italia
che vedrà quali ospiti amici e colleghi che ci presenteranno località ed
attrattive turistiche della loro città, natale o in cui vivono o in cui sono
vissuti molti anni, o di luoghi che hanno comunque visitato e che hanno trovato
interessanti.
La prima ospite a
partecipare a questa nuova Rubrica è l’amica e collega Autrice e Blogger Maria Cristina Buoso che ci descriverà Rovigo. In ogni incontro con lei, Maria Cristina
delizierà anche il nostro palato presentandoci una ricetta della cucina locale
tradizionale.

ospite dopo l’intervista sul tuo libro e la successiva recensione che feci.
Per
coloro che non ti conoscessero, vorresti presentarti brevemente?
MCB:
Certamente. Grazie per l’invito. Mi presento brevemente. Mi chiamo Maria
Cristina Buoso e sono una autrice e blogger.
Autrice
praticamente da sempre e blogger da pochi anni.
Quando Maria Teresa mi ha chiesto se mi sarebbe piaciuto parlare di una regione e/o città Italiana ho accettato con piacere e ho deciso di farvi conoscere il Veneto e Rovigo e d’intorni.
Rovigo è una città medioevale di origine romanica; il primo documento sulla città risale al 24 aprile 838, dove Rovigo viene definita in latino - villa que nuncupatur Rodigo - ossia "borgo rurale detto Rodigo". Nel 920 il vescovo di Adria Paolo Cattaneo fece costruire una fortificazione sugli argini dell'Adigetto trasferendovi la sede vescovile. Prima dei romani anche gli Etruschi si fermarono in queste terre palustri.
MTDD:
Maria Cristina, vogliamo ricordare cosa accadde a Rovigo dopo la caduta
dell’Impero Romano?
MCB:
Dopo la caduta dell'Impero Romano Rovigo si salvò dalle invasioni Barbariche
grazie alle paludi che la attorniavano. È
sempre stata una terra contesa da altri popoli: per esempio, gli Estensi erano
presenti a Rovigo già nel 1117 e, a parte brevi parentesi, Rovigo rimase
estense per quasi tre secoli. Poi per altri tre secoli, dal 1482, ci fu la Repubblica di Venezia e dopo,
all'inizio del XIX secolo, la dominazione francese e per finire la dominazione
austriaca, fino all’annessione al Regno d’Italia.
MTDD:
Che impatto ebbero tutte queste diverse civiltà sullo sviluppo e la cultura di
Rovigo?
MCB:
Ognuna di loro lasciò il segno nella città e contribuì a creare nel rodigino
un carattere un po’ chiuso; famoso “Ruigo no m'intrigo” (a Rovigo non
m'intrigo). È un proverbio che viene spontaneo ripetere ai veneti quando si
parla di Rovigo ed ha un fondo di verità antica; probabilmente viene da fattori
ed eventi storici che ho sopra nominato.
Pensate che una volta mi è stato detto perfino in Svizzera, incredibile!
MTDD:
Come descriveresti la tua città per presentarla a chi non la conoscesse?
MCB:
Rovigo è una piccola città, piacevole, ricca di fascino, di storia e cultura.
Vivace, ma al tempo stesso tranquilla, a misura d’uomo, perfetta per essere
conosciuta semplicemente camminando per le vie della città.
MTDD:
Sono convinta che ci sia molto più da dire su Rovigo, o sbaglio?
MCB:
No, non ti sbagli affatto. Continuerò a parlavi
di questa città nei prossimi articoli.
Vi lascio, però,
con una ricetta che spero apprezzerete tutti.
Ho pensato, infatti, che sarebbe stato piacevole terminare ogni volta la
nostra intervista con una ricetta locale
o del Veneto. Il problema è che sono tante e varie, alcune legate ai miei ricordi oltre che alla
terra in cui sono nata.
Ho pensato di
iniziare con i Sugoi (Sugoli) una ricetta legata alla mia infanzia.
Sugoli
È una ricetta
personalizzabile perché chi cucina decide quanta farina e/o zucchero utilizzare
a seconda delle proprie esigenze; il
quantitativo esatto non c’è perché ognuno la adatta al proprio gusto, al tipo di mosto che ha a disposizione, ecc...
Ma cercherò di
darvi il più possibile una idea di come farla.
Per prima cosa
bisogna avere a disposizione del mosto, per questo viene fatta quando si
vendemmia, ma se qualcuno volesse provare a farla al di fuori di questo
periodo... allora il procedimento sarà diverso perché dovrete fare voi un mosto
casalingo.
In questo caso
dovrete avere dell’uva, secondo me quella nera per i sugoi è la più indicata, ma potete usare quella che volete; poi dovrete pulirla e passarla o con il passaverdure (in questo modo si avvicina
di più all’idea di mosto) oppure, se preferite, con una centrifuga per la
frutta.
Premetto che io
l’ho sempre fatta ad occhio perché così mi era stata insegnata da mia nonna; mi regolavo in base alla quantità di mosto e se
era più o meno dolce per aggiungere all’occorrenza un po’ di zucchero.
Vi darò delle
indicazioni, ma poi aggiustate voi a vostro gusto. OK?
Mettete il succo
ottenuto in una pentola e aggiungete per ogni mestolo un cucchiaio di farina e,
se lo desiderate, mezzo di zucchero. Dipende dai vostri mestoli e dalla
consistenza e sapore del mosto, per cui
assaggiate e aggiustate durante la cottura con eventuale aggiunta di zucchero
(io lo usavo raramente lo zucchero).
Come per la
marmellata, il Sugoi (Sugoli) non deve fare grumi e non deve attaccare sul
fondo della pentola, che deve essere con i bordi alti, più o meno 20/30 minuti
di cottura, ma sarete voi a capire quando sarà il momento di toglierla
assaggiandola e...attenti che scotta!
Quando è pronto lo
potete versare in contenitori piccoli o grandi che metterete poi in frigo o in
un ambiente fresco.
Se li volete più
densi aggiungete più farina; se, al contrario, li desiderate più morbidi, usate
meno farina.

und Touristenattraktionen ihrer Stadt, Heimatstadt oder ihres Wohnortes oder
ihres langjährigen Wohnortes vorstellen werden die sie auf jeden Fall besucht
und die sie interessant gefunden haben.

der an dieser neuen Kolumne teilnimmt, ist die Freundin und Kollegin Autorin

diejenigen, die Dich noch nicht kennen, möchtest Du Dich kurz vorstellen?
MCB:
Gerne. Danke für die Einladung. Ich stelle mich kurz vor. Mein Name ist Maria
Cristina Buoso und ich bin Autorin und Bloggerin.
Autorin bin ich
praktisch schon immer und Bloggering seit einigen Jahren.
Als mich Maria
Teresa fragte, ob ich über eine italienische Region und/oder Stadt sprechen
möchte, habe ich gerne zugesagt und beschlossen, Ihnen Venetien und Rovigo
und seine Umgebung vorzustellen.
Rovigo ist eine
mittelalterliche Stadt romanischen Ursprungs; Das erste Dokument über die Stadt
stammt aus dem 24. April 838, wo Rovigo auf Latein definiert wird - villa que
nuncupatur Rodigo - oder "ländliches Dorf namens Rodigo". Im Jahr
920 ließ der Bischof von Adria Paolo Cattaneo eine Festung am Ufer des Adigetto
errichten und verlegte den Bischofssitz dorthin. Vor den Römern hielten auch die Etrusker in
diesen sumpfigen Ländern Halt.
MTDD:
Maria Cristina, wollen wir uns daran erinnern, was in Rovigo nach dem Untergang
des Römischen Reiches geschah?
MCB:
Nach dem Fall des Römischen Reiches wurde Rovigo dank der Sümpfe, die es
umgaben, vor den Invasionen der Barbaren gerettet. Es war schon immer ein Land, das von anderen
Völkern bestritten wurde: So war die Familie Este beispielsweise in Rovigo bereits
1117 präsent, und abgesehen von kurzen Klammern blieb Rovigo fast drei
Jahrhunderte lang Este. Dann folgten für
weitere drei Jahrhunderte ab 1482 die Republik Venedig und dann Anfang des 19. Jahrhunderts die französische und schließlich
die österreichische Herrschaft bis zur Angliederung an das Königreich Italien.
MTDD:
Welchen Einfluss hatten all diese verschiedenen Zivilisationen auf die
Entwicklung und Kultur von Rovigo?
MCB:
Jeder von ihnen hat die Stadt geprägt und dazu beigetragen, Rovigo einen etwas
verschlossenen Charakter zu verleihen; berühmte "Ruigo no m'intrigo"
(in Rovigo intrigiere ich nicht). Es ist
ein Sprichwort, das die Venezianer spontan wiederholen, wenn es um Rovigo geht,
und das einen Fundus alter Wahrheiten enthält, die wahrscheinlich von
historischen Faktoren und Ereignissen stammen, die ich oben erwähnt habe. Man
denke nur, dass mir das einmal in der Schweiz erzählt wurde, unglaublich!
MTDD:
Wie würdest Du Deine Stadt beschreiben, um sie denen vorzustellen, die sie
nicht kennen?
MCB:
Rovigo ist eine kleine, angenehme Stadt voller Charme, Geschichte und Kultur.
Lebhaft, aber gleichzeitig ruhig, auf menschlicher Ebene, perfekt, um einfach
durch einen Spaziergang durch die Straßen der Stadt bekannt zu werden.
MTDD:
Ich bin überzeugt, dass es noch viel mehr über Rovigo zu sagen gibt, täusche
ich mich?
MCB:
Nein, da liegst Du überhaupt nicht falsch. Ich werde Euch in den nächsten
Artikeln weiterhin von dieser Stadt erzählen.
Ich hinterlasse Euch
jedoch ein Rezept, von dem ich hoffe, dass Ihr es alle zu schätzen wisst.
Tatsächlich dachte ich, es wäre schön, unser Interview jedes Mal mit einem
lokalen oder venezianischen Rezept zu beenden. Das Problem ist, dass sie
zahlreich und vielfältig sind, einige mit meinen Erinnerungen und mit dem Land,
in dem ich geboren wurde, verbunden sind.
Ich dachte darüber
nach, mit Sugoi (Sugoli) zu beginnen, einem Rezept, das mit meiner
Kindheit verbunden ist.
Sugoli
Es ist ein
anpassbares Rezept, da der Koch entscheidet, wie viel Mehl und/oder Zucker er
nach seinen Bedürfnissen verwendet; Die genaue Menge ist nicht da, weil jeder
sie an seinen Geschmack anpasst, an die Art des Mostes, den er zur Verfügung
hat, usw. ...
Aber ich werde
versuchen, Euch so viel wie möglich eine Vorstellung davon zu geben, wie Ihr es
tun könnt.
Zuerst müsst Ihr
den Most zur Verfügung haben, weshalb er bei der Ernte fertig ist, aber wenn
jemand versuchen möchte, ihn außerhalb dieses Zeitraums herzustellen ... dann
wird das Verfahren anders sein, weil Ihr einen hausgemachten Most herstellen
müsst.
In diesem Fall
müsst Ihr Trauben haben, meiner Meinung nach ist die schwarze für Saucen am
besten geeignet, aber Ihr könnt verwenden, was Ihr wollt; dann müsst Ihr es
reinigen und entweder mit der Gemüsepresse passieren (auf diese Weise kommt es
der Idee des Mosts näher) oder mit einer Fruchtpresse, wenn Ihr es vorzieht.
Ich erkläre, dass
ich es immer nach Augenmaß gemacht habe, weil es mir von meiner Großmutter
beigebracht wurde; Ich würde es je nach Menge des Breies und je nachdem, wie
süß es sein könnte, anpassen und nach Bedarf etwas Zucker hinzugefügen.
Ich gebe Euch ein
paar Tipps, aber dann stellt Ihr Euch nach Eurem Geschmack ein. OK?
Den erhaltenen
Saft in einen Topf geben und in jede Kelle einen Löffel Mehl und nach Belieben
die Hälfte des Zuckers geben. Es hängt von Euren Schöpflöffeln und von der
Konsistenz und dem Geschmack des Mosts ab, also probieren und passt Ihr ihn
während des Kochens mit der möglichen Zugabe von Zucker an (ich habe selten
Zucker verwendet).
Was die Marmelade
betrifft, so darf die Sugoi (Sugoli) keine Klumpen bilden und nicht am Boden
des Topfes haften, der mit hohem Rand mehr oder weniger 20/30 Minuten gekocht
werden muss, aber Ihr werdet verstehen, wann es soweit ist .. um es durch
Probieren zu entfernen und ... Vorsicht, es ist heiß!
Wenn es fertig ist,
könnt Ihr es in kleine oder große Behälter füllen, die Ihr dann in den
Kühlschrank oder an einen kühlen Ort stellt.
Wenn Ihr sie
dicker haben möchtet, fügt Ihr mehr Mehl hinzu; wer sie hingegen weicher haben
möchte, nimmt weniger Mehl.
