MTDD: Hello, Maria Cristina, and thank you for being here with us again today.

 

MCB: Thanks to you, Maria Teresa. It is always a pleasure to be your guest.

 

 

MTDD: Maria Cristina, what aspect or event concerning your beloved city would you like to talk to us about today?

 

MCB: Today, I wanted to tell you about the Rovigo Fair.

 

The Rovigo Fair, known as Rovigo October, has been held for over five hundred years and represents an important opportunity for commerce and social gathering in the city.

 

I will mention some essential passages of its history because it is complex and lengthy.

 

 

MTDD: Sounds excellent. Tell us everything.

 

MCB: The Rovigo Fair was born in 1482, the year in which the city came under the control of the Serenissima before it was under the Este dominion, which had exasperated the city with harsh and violent misgovernment. Thus, the citizens turned to the doge Giovanni Mocenigo to voluntarily submit to the authority of the Serenissima and hope for a less burdensome life.

 

For hundreds of years, it was one of the most important fairs in the Veneto region, and from 1487, the date was moved several times to favor Venetian merchants and to allow farmers and traders to have their goods in time to bring them to the fair. In 1524, at the 'request' of the merchants of Venice, the date was set on October 20, starting at 2 pm for eight days; it was also famous for the horses and cattle of selected breeds owned by the nobles.

 

 

MTDD: How was it organized?

 

MCB: The shops were in the middle of the square and under the arcades; there were also musical events in the Lavezzo Theater (today, Social Theater).

 

In 1669 the "free market" was established, so called because that day was free from duties and gabelles, which exhibitors paid for the spaces occupied (in dialect "Marti Franco"). They decided that the day of the franc market should be the first Tuesday after October 20.

 

In that historical period, the fair also had a critical aggregation role for the Jews who lived in the city because it allowed them to trade in those days like everyone else. Trade was forbidden to Jews for the rest of the year.

 

In the following years and centuries, there were many different changes: we went from bullfighting with bulls through the city streets (around the 16th century) to the passion for melodrama (in the 17th century) and many other peculiarities that I invite you to read in the various links which I leave at the end as usual.

 



 

MTDD: Have there been any changes over time?

 

MCB: Yes. More recently, the fair has become open to the whole family for various reasons. It was possible to buy goods at a lower price than in the shop and find others that are difficult to see in the different city shops. The children went on the rides while the parents got lost among the stalls that started from the city's main squares to the court where the rides were located. The fathers often stopped to admire the machinery related to agriculture; there was a lot of movement and many people in the streets.

 

In recent years, the fair has undergone other logistical and customary changes.

 

 

 

The square where the rides are located is now the headquarters of the new Police Headquarters, and these have been moved in front of the Censer, a former sugar factory.


The stalls that started from Piazza Garibaldi and reached the square where the rides were located have disappeared. Many have moved to another area, and others have never come. Covid has contributed, together with this year's energy crisis, to drastically reducing the number of participants.


But it always remains a festive appointment that everyone awaits, hoping to have fun alone or in company.

MCB: With polenta infasolà.

 

 

 

RECIPE

 

Polenta infasolà (polenta with beans)

 

Minor premise: polenta in Polesine and Veneto is fundamental, and in the winter, it is combined with many dishes. I have already told you a little about how vital polenta is in Veneto and Rovigo.

 

This recipe is so typical that it changes its name according to where it is made: in Venice, it is called sughi dei Fasioi (beans in Italian).

 

 

There are several variations; I'm going by heart...

 

You need more or less 300 gr. of dried beans for four people, but you can also abound if you want (in my house, we never weigh them). 😊

 

These are usually borlotti beans: they are left to soak in water for 12 hours (one night) or even 24 hours. In my house, usually a great night.

 

Now I'm writing you with two variations; you choose the one you prefer according to your taste.

 

 

In the first version

 

Add bay leaves and garlic to the beans; boil for about 2 hours with ribs and pork trotter.

 

At the end of cooking, the meat is removed from the pot and stripped of its meat. The broth is used to make the "polenta infasolà."

 

The "Infasolà" polenta: the yellow flour is thrown into the hot broth, bearing in mind that it is slightly less than the amount envisaged for classic polenta; mix in the cauldron and at the end (about the last 10 minutes), pour in several whole beans and pepper to taste. Then serve the dish on a plate.

 

Add the meat removed earlier.

 

 

In the second version

 

Separately, put the chopped bacon (about 100 g) in a pan with oil and half a chopped onion (you can also use butter if you want) and add plenty of water, salt, rosemary and sage leaves, and the beans.

 

Once everything is ready (about 3 hours), reduce the water if it is too much and add the corn flour (about 3 ounces) and mix everything until it is ready (about 30/45 minutes). It is excellent, both hot and cold.

 

Alternatively, you can add the polenta flour to the water in which you cooked the beans.

 

You will undoubtedly find other versions on the net. I haven't had it for years, and I've tried to remember it as best I can.

MTDD: Maria Cristina, di quale aspetto o evento che riguarda la tua amata città vuoi parlarci oggi?

MCB:  Oggi ho pensato di parlarvi della Fiera di Rovigo.

La Fiera di Rovigo, nota come Ottobre Rodigino, si ripete da oltre cinquecento anni e rappresenta un'importante occasione di commercio e aggregazione sociale per la città.

Cercherò di accennarvi alcuni passaggi essenziali della sua storia perché è abbastanza articolata e lunga.

 

MTDD: Prego. Raccontaci tutto.

MCB: La Fiera di Rovigo nasce nel 1482, anno in cui la città passò sotto il controllo della Serenissima, prima era sotto il dominio estense che aveva esasperato la città con un malgoverno duro e violento. I cittadini, così, si rivolsero al doge Giovanni Mocenigo per sottomettersi volontariamente al dominio della Serenissima e sperare in una vita meno pesante.

Per centinaia di anni è stata una delle fiere più importanti del Veneto e dal 1487,  la data fu spostata più volte per favorire i mercanti veneziani e per permettere ai contadini e commercianti di avere le loro merci in tempo per portarle alla fiera. Nel 1524, su ‘richiesta’ dei mercanti di Venezia, la data venne fissata al 20 di ottobre con inizio alle 14 per un arco di 8 giorni; era famosa anche per i cavalli e i bovini di razza selezionata di proprietà dei nobili.

 

MTDD: Come era organizzata?

MCB: Le botteghe erano in mezzo alla piazza e sotto i portici, inoltre, c’erano anche manifestazioni musicali nel Teatro Lavezzo (oggi Teatro Sociale).  

Nel 1669 fu istituito il “mercato franco”, chiamato così perché quel giorno era libero da dazi e gabelle, che gli espositori pagavano per gli spazi occupati (in dialetto “Marti Franco”). Si decise che il giorno del mercato franco fosse il primo martedì dopo il 20 ottobre.

La fiera, in quel periodo storico, aveva un ruolo importante di aggregazione anche per gli ebrei che vivevano in città perché gli permetteva  di commerciare in quei giorni come tutti.  Agli ebrei, infatti, il commercio era vietato per tutto il resto dell’anno.

Negli anni e secoli successivi ci furono molti e diversi cambiamenti: si passava dalla corrida con i tori per la vie cittadine (nel ‘500 circa) alla passione del melodramma (nel ‘600) e tante altre particolarità che vi invito a leggere nei vari link che lascio alla fine come al solito.

 



MTDD: Ci sono stati cambiamenti nel tempo?

MCB: Sì. In tempi più recenti la fiera è diventata aperta a tutta la famiglia per vari motivi. Si poteva acquistare merci ad un prezzo inferiore rispetto al negozio e trovarne altre che difficilmente si trovano nelle varie botteghe cittadine. I bambini andavano sulle giostre mentre i genitori si perdevano tra le bancarelle che partivano dalle piazze principali della città fino al piazzale dove si trovavano le giostre. I padri spesso si fermavano ad ammirare i macchinari legati all’agricoltura; c’era molto movimento e tanta gente per le strade.

In questi ultimi anni la fiera ha subito altri cambiamenti, sia logistici che di costume.

 


Il piazzale dove si trovano le giostre adesso è la sede della Questura nuova e queste sono state spostate davanti al Censer, ex zuccherificio.

Le bancarelle che iniziavano da piazza Garibaldi e raggiungevano il piazzale dove si trovavano le giostre sono scomparse. Molte hanno cambiato zona, altre non sono più venute. Il Covid ha contribuito, insieme alla crisi energetica di quest’anno, a ridurre drasticamente il numero dei partecipanti.

Ma rimane sempre un appuntamento festoso che tutti aspettano sperando di divertirsi da soli o in compagnia.

MTDD: Purtroppo l’emergenza che c’è stata ha causato non pochi problemi anche all’economia, e questo a livello mondiale. Sono felice di sapere che, malgrado tutto, Rovigo ha mantenuto più o meno intatta questa sua antica tradizione.

MTDD: Con cosa ci delizi oggi?

MCB: Con la polenta infasolà.  

 

 

RICETTA

La polenta infasolà  (polenta con i fagioli)

 

Piccola premessa: la polenta in Polesine ed in Veneto è molto importante e nel periodo invernale è abbinata a tantissimi piatti. Se non ricordo male, vi ho già parlato un po’ di come la polenta sia molto importante nel Veneto e a Rovigo.

Questa ricetta è talmente comune che cambia nome a seconda del posto in cui viene fatta: a Venezia, per esempio, si chiama sughi dei fasioi (in italiano fagioli).

Ci sono diverse variazioni, io vado  a memoria...

Per 4 persone, occorrono più o meno 300 gr. di fagioli secchi, ma potete anche abbondare se volete (a casa mia si va ad occhio non li pesiamo mai). 😊

Di solito sono i borlotti: si lasciano in ammollo in acqua 12 ore (una notte) o anche 24 ore.  A casa mia di solito una notte abbondante.

Adesso vi scrivo due varianti, scegliete voi quella che preferite a vostro gusto.

 

Nella prima versione

Aggiungete ai fagioli alloro e aglio; fate bollire per circa 2 ore insieme a costicine e zampetto di maiale. Al termine della cottura la carne  viene  tolta dalla pentola e spolpata, Il brodo viene usato per fare la “polenta infasolà” .

La polenta “Infasolà”: nel brodo si getta a caldo la farina gialla, tenendo presente che sia poco meno della misura prevista per la polenta classica; si mescola  nel paiolo  ed alla fine (ultimi 10 minuti circa) si versa una quantità di fagioli interi e pepe q.b. servendo poi  in una placca.

Unite la carne tolta prima.

 

Nella seconda versione

A parte mettete in una padella un battuto di pancetta pestata (circa 100 gr.) con  olio e mezza cipolla tritata (se volete potete usare anche del burro) e aggiungete abbondante acqua, sale e alcune foglie di rosmarino e salvia e i fagioli.

Una volta che tutto è pronto (circa 3 ore) riducete l’acqua se è troppa e aggiungete la farina di mais a pioggia (circa 3 etti) e mescolate il tutto fino a quando non è pronta (30/45 minuti circa). È buona sia calda che fredda.

Se lo desiderate, come alternativa, all’acqua dove avete cotti i fagioli potete aggiungere la farina della polenta.

Di sicuro in rete troverete altre versioni. Sono anni che non la mangio e ho cercato di ricordarla meglio che ho potuto.

Io, comunque, preferisco la prima versione e voi?

MTDD: Maria Cristina, über welchen Aspekt oder welches Ereignis in Bezug auf Deine geliebte Stadt möchtest Du heute mit uns sprechen?

MCB: Heute dachte ich, Euch von der Rovigo-Messe zu erzählen.

Die Rovigo-Messe, bekannt als Rodigo October, findet seit über fünfhundert Jahren statt und stellt eine wichtige Gelegenheit für Handel und gesellschaftliche Zusammenkünfte für die Stadt dar.

Ich werde versuchen, einige wesentliche Passagen ihrer Geschichte zu erwähnen, da sie ziemlich komplex und lang ist.

 

MTDD: Bitte. Erzähle uns alles.

MCB: Die Rovigo-Messe wurde 1482 geboren, dem Jahr, in dem die Stadt unter die Kontrolle der Serenissima geriet, bevor sie unter die Este-Herrschaft fiel, die die Stadt mit harter und gewalttätiger Misswirtschaft verärgert hatte. So wandten sich die Bürger an den Dogen Giovanni Mocenigo, um sich freiwillig der Herrschaft der Serenissima zu unterwerfen und auf ein weniger beschwerliches Leben zu hoffen.

Jahrhundertelang war es eine der wichtigsten Messen in der Region Venetien und ab 1487 wurde das Datum mehrmals verschoben, um venezianische Kaufleute zu begünstigen und Bauern und Händlern zu ermöglichen, ihre Waren rechtzeitig zur Messe zu bringen. 1524 wurde auf “Anfrage” der Kaufleute von Venedig das Datum auf den 20. Oktober festgelegt, beginnend um 14 Uhr für eine Spanne von 8 Tagen; Es war auch berühmt für die Pferde und Rinder ausgewählter Rassen, die im Besitz der Adligen waren.

 

MTDD: Wie war sie organisiert?

MCB: Die Geschäfte waren mitten auf dem Platz und unter den Arkaden, außerdem fanden im Lavezzo Theater (heute Sozialtheater) auch Musikveranstaltungen statt.

1669 wurde der “freie Markt” gegründet, so genannt, weil dieser Tag frei von Zöllen und Gabelles war, die die Aussteller für die belegten Plätze bezahlten (im Dialekt “Marti Franco”). Als Tag des Frankenmarktes wurde der erste Dienstag nach dem 20. Oktober festgelegt.

Der Jahrmarkt hatte in dieser historischen Zeit auch für die in der Stadt lebenden Juden eine wichtige Sammelfunktion, da sie damals wie alle anderen Handel treiben konnten. Tatsächlich war der Handel für Juden für den Rest des Jahres verboten.

In den folgenden Jahren und Jahrhunderten gab es viele und unterschiedliche Veränderungen: Vom Stierkampf mit Stieren durch die Straßen der Stadt (um das 16. Jahrhundert) zur Leidenschaft für das Melodram (im 17. Jahrhundert) und vielen anderen Besonderheiten, zu deren Lektüre ich Euch einlade in den verschiedenen Links, die ich wie üblich am Ende lasse.

 

 


MTDD: Gab es im Laufe der Zeit irgendwelche Veränderungen?

MCB: Ja, in jüngerer Zeit ist die Messe aus verschiedenen Gründen offen für die ganze Familie geworden. Es war möglich, Waren zu einem niedrigeren Preis als im Geschäft zu kaufen und andere zu finden, die in den verschiedenen Geschäften der Stadt schwer zu finden sind. Die Kinder gingen auf die Fahrgeschäfte, während die Eltern sich zwischen den Ständen verirrten, die von den Hauptplätzen der Stadt bis zu dem Platz führten, auf dem sich die Fahrgeschäfte befanden. Die Väter blieben oft stehen, um die landwirtschaftlichen Maschinen zu bewundern; es war viel Bewegung und viele Menschen auf den Straßen.

In den letzten Jahren hat die Messe weitere Veränderungen erfahren, sowohl logistische als auch übliche.

 

 


 

Der Platz, auf dem sich die Fahrgeschäfte befinden, ist jetzt das Hauptquartier des neuen Polizeipräsidiums und dieses wurde vor das Räuchergefäß, eine ehemalige Zuckerfabrik, verlegte.

Die Stände, die von der Piazza Garibaldi ausgingen und den Platz erreichten, auf dem sich die Fahrgeschäfte befanden, sind verschwunden. Viele sind in eine andere Gegend gezogen, andere sind nie gekommen. Covid hat zusammen mit der diesjährigen Energiekrise dazu beigetragen, die Teilnehmerzahl drastisch zu reduzieren.

Aber es bleibt immer ein festlicher Termin, auf den alle warten, in der Hoffnung, alleine oder in Gesellschaft Spaß zu haben.

MTDD: Leider hat der eingetretene Notfall auch viele Probleme für die Wirtschaft verursacht, und dies auf globaler Ebene. Ich bin froh zu wissen, dass Rovigo trotz allem diese alte Tradition mehr oder weniger intakt gehalten hat.

MTDD: Womit erfreust Du uns heute?

MCB: Mit Polenta infasolà.

 

 

REZEPT

Polenta infasolà (Polenta mit Bohnen)

 

Kleine Prämisse: Polenta ist in Polesine und in Venetien sehr wichtig und wird im Winter mit vielen Gerichten kombiniert. Wenn ich mich richtig erinnere, habe ich Euch bereits ein wenig darüber erzählt, wie wichtig die Polenta im Veneto und in Rovigo ist.

Dieses Rezept ist so verbreitet, dass es seinen Namen je nach Ort ändert, an dem es hergestellt wird: In Venedig heißt es beispielsweise sughi dei Fasioi (Bohnen auf Italienisch).

Es gibt mehrere Variationen, ich gehe auswendig...

Für 4 Personen braucht man etwa 300 gr. von getrockneten Bohnen, aber Ihr könnt auch reichlich haben, wenn Ihr wollt (in meinem Haus wiegen wir sie nie). 😊

Dies sind normalerweise Borlotti-Bohnen: Ihr werdet 12 Stunden (eine Nacht) oder sogar 24 Stunden in Wasser eingeweicht. In meinem Haus normalerweise eine reichliche Nacht.

Jetzt schreibe ich Euch zwei Variationen, Ihr wählt nach Ihrem Geschmack die, die Ihr bevorzugt.

 

In der ersten Fassung

Lorbeerblätter und Knoblauch zu den Bohnen geben; zusammen mit Rippchen und Schweinshaxe ca. 2 Stunden kochen. Am Ende des Garvorgangs wird das Fleisch aus dem Topf genommen und entfleischt, aus der Brühe wird die “polenta infasolà” zubereitet.

Die Polenta “Infasolà”: Das gelbe Mehl wird in die heiße Brühe geworfen, wobei zu berücksichtigen ist, dass es etwas weniger ist als die für die klassische Polenta vorgesehene Menge; im Kessel mischen und am Ende (etwa in den letzten 10 Minuten) eine Menge ganze Bohnen und Pfeffer nach Geschmack zugeben; dann in einem Teller servieren.

Fügt Ihr das zuvor entfernte Fleisch hinzu.

 

In der zweiten Fassung

Separat den gehackten Speck (ca. 100 g) mit Öl und einer halben gehackten Zwiebel (wer möchte kann auch Butter verwenden) in eine Pfanne geben und reichlich Wasser, Salz und etwas Rosmarin- und Salbeiblätter sowie die Bohnen dazugeben.

Sobald alles fertig ist (ca. 3 Stunden), reduziert Ihr das Wasser, wenn es zu viel ist, und fügt Ihr das Maismehl (ca. 3 Unzen) hinzu und mischt Ihr alles, bis es fertig ist (ca. 30/45 Minuten). Es ist sowohl heiß als auch kalt gut.

Wenn Ihr möchtet, könnt Ihr alternativ das Polentamehl in das Wasser geben, in dem Ihr die Bohnen gekocht habt.

Im Netz findet man sicher noch andere Versionen. Ich hatte es seit Jahren nicht mehr und habe versucht, mich so gut wie möglich daran zu erinnern.

Ich bevorzuge jedoch die erste Version und Ihr?

Extraordinary research is carried out through the study and comparison of different historical and religious texts and, in particular, of the symbolic vocabulary of the Gospel, according to John. The work explores and analyzes the metaphors and symbolisms (gardens, the tree of life, water, the cross) contained in the sacred scriptures, proposing interesting interpretations that disregard everyone's beliefs. Through philosophical, philological, and eschatological analyses, the authors make us understand the enigmas and circumstances in the complex scriptures. It is also a reading that stimulates reflection on the very meaning of life.

Una straordinaria ricerca svolta attraverso lo studio e il confronto di diversi testi storici e religiosi e in particolare del vocabolario simbolico del Vangelo secondo Giovanni. L'opera percorre e analizza le metafore e i simbolismi (i giardini, l'albero della Vita, l'acqua, la croce) contenuti nelle sacre scritture, proponendo delle interessanti interpretazioni che prescindono la credenza di ognuno. Attraverso analisi filosofiche, filologiche, escatologiche le autrici riescono a farci comprendere enigmi e circostanze contenute nelle complesse scritture. È anche una lettura che stimola la riflessione sul senso stesso della vita.

Complimenti alle autrici per il sapiente lavoro svolto e per i contenuti che ne fanno un'opera davvero pregevole.

Eine außergewöhnliche Forschung, die durch das Studium und den Vergleich verschiedener historischer und religiöser Texte und insbesondere des symbolischen Vokabulars des Johannesevangeliums durchgeführt wurde. Die Arbeit erforscht und analysiert die Metaphern und Symboliken (Gärten, Lebensbaum, Wasser, Kreuz) in den heiligen Schriften und schlägt interessante Interpretationen vor, die den Glauben aller außer Acht lassen. Durch philosophische, philologische, eschatologische Analysen schaffen es die Autorinnen, uns die Rätsel und Umstände, die in den komplexen Schriften enthalten sind, verständlich zu machen. Es ist auch eine Lektüre, die zum Nachdenken über den Sinn des Lebens anregt.

Herzlichen Glückwunsch an die Autorinnen für die geleistete geschickte Arbeit und für den Inhalt, der es zu einem wirklich wertvollen Werk macht.
