Hello Maria Cristina and welcome back among us. It is always a pleasure to have
you as my guest.
MCB: The
pleasure is mine. Thank you for the invitation.
MTDD:
Maria Cristina, today we will keep talking with you only about cuisine.
What recipe have you prepared for our readers?
MCB:
Today I thought I would present you with Marinated Herring with Onions.
MTDD: That’s
great! The name alone makes my mouth water...
MCB:
Indeed. This is another recipe that is as simple as it is tasty. Once upon a
time, herring was a very poor dish, today it is a gourmet dish.
My father loved to eat it every now and then but every time a different
version of it; he preferred the smoked one perhaps because it reminded him of
the hunger he suffered during the war when a slice of polenta was rubbed on the
surface of the herring to have the illusion of eating it and the fish lasted a
long time before being eaten by the family.
For those who wish to prepare it, the procedure is the following:
Boil and cook the herring in milk and water; drain and dry in a hot oven;
Chop and sauté an onion; add some wine vinegar, let it evaporate and then
turn off the heat;
In a bowl alternate eggs and herring fillets, onion and parsley; cover with
oil and let rest for a few hours;
Serve everything with hot polenta.
